Rajasthani Govind Gatta Curry

Govind gatta is soft and mouth melting gram flour dumplings that comes from Rajasthani/marwari cuisine. Govind Gatta Curry is also known as Shahi Gatte because of it's rich gravy. It's little beat of different from normal regular gatta curry.

Steps

First to take a large bowl then add all the ingredients and of gattas and mix them well to form a dry crumble.

Now add a little water to the dry besan mix and knead to make a firm dough.

Then take separate bowl and add all the stuffing ingredients and mix it.

Now divide the dough to equal balls, take a ball and make a disc.Take 1 tbsp of filling and place in the center of the disc, fold in to cover from all sides and then roll to shape into a ball.

Now take it rest to balls and in a other side heat enough water in a pan and bring it to boil.

Now boil all the gattas in boiling water and cook them well for 10-15 mins.

Strain the gattas and reuse the water to use in the gravy.

Now heat 3-4 tbsp of oil in wok and fry all gattas in medium to low flam until the colour should be chande in golden brown.

In a same wok remove extra oil and add cumin seeds once they crackle and ginger garlic paste and saute for 2 min.

Now next add in the tomato puree and let it cook until you see oil separating from the sides.

Now add all the dry spices and salt with whisked yogurt. Let it also cook until the oil separates.

Then add around 2 to 3 cups of water along with fried gattas and cook it covered for about 15-20 minutes on low flame. In a last add garam masala powder in gravy and mix it.

Govind gatta curry is ready for the serve garnish with some fresh coriander leaves and serve with fulka roti.
