Take idly batter in a mixing bowl (for batter soak 2 cups of rice,1 cup of urad dal in water for overnight,next day grind to a smooth paste and keep aside for 7-8 hrs for fermentation)

Keep the steamer ready

Pour this batter in idly mould and steam for 15 to 20min (10min on high flame and 5min on low flame)

Now for sambar

Wash and cook toor dal(Bengal gram) in a pressure cooker and keep aside

Now heat oil in a kadhai

Add mustard seeds and cumin

Once it starts crackling add,red chillies and Curry leaves

Now add chopped onion

Saute till it becomes pink

Add all dry spices

Now add chopped tomatoes, chopped eggplant and potato

Mix everything well,cover and cook on low flame till all vegetables get cooked

Now pour cooked dal

Add water to adjust the consistency,add tamarind paste and jaggery

Boil for 2-3min

Sprinkle chopped coriander leaves

Serve soft Idly with hot sambar
