Cooking Instructions

First, peel the potatoes, wash them, and cut into chunks.

Trim the ends off the green beans and wash them.

In a steamer, place the potatoes and green beans in separate containers and levels. Place the potatoes closer to the water, as they need to cook for about 20 minutes. I cooked the green beans for only 15 minutes because I like them crunchy. If you prefer them softer, cook for about 10 minutes.

If you don't have a steamer, you can also use a microwave. Just add a little water to the bottom of the container and cover to prevent drying. In the microwave, cooking times are shorter: 10 minutes for the potatoes and about 5-7 minutes for the green beans.

Now wash the radicchio and cut it into thin strips.

Crush the walnut kernels by hand or with a food processor.

Transfer all the ingredients to a bowl, simply dress with olive oil and salt, mix, and let cool.

I recommend refrigerating the potato salad for at least an hour before serving.
