Ingredients

8 servings
  1. 8medium sized potatoes
  2. 1small white onion
  3. 1 clovegarlic
  4. 2 tablespoonssmall cloves
  5. 3tablespons Green olives in oil and lemon
  6. 4 tablespoonsolive oil
  7. 3 tablespoonssherry vinegar
  8. Salt
  9. Black pepper
  10. Cayenne pepper

  1. 1

    Steam your potatoes till soft.

  2. 2

    Let cool, then peel and cut into bite sized cubes.

    Finely dice the white onion. Add to the potatoes

  4. 4

    Mash your garlic clove and add to the potatoes and onions.

  5. 5

    Add the green olives and the capers.

  6. 6

    Add the olive oil and the vinegar. Season with salt, black and red peppers.

  7. 7

    Keep in the fridge covered for several hours. Serve as antipasti or as a side dish.
