Super quick and easy carrot salad. The amounts are just a rough idea, it's best add a little of each, and then tweak it depending on how you want it to taste.

Peel the carrots, top and tail, and then grate using the coarse side of the grater.

Combine half a teaspoon of the Dijon mustard with a big splash of olive oil and mix into a paste. Add this to the carrots with a pinch of salt, and the juice of half a lemon.

Depending on your taste, add the second half of the lemon, and a little more Dijon. It's good to eat straight away, but will taste even better if you can make it advance and let it marinate.
