Bittermelon soup with roasted pork

This is my remedy for cough or when I feel that my body need a detox. Bittermelon has various therapeutic benefit according to Traditional Chinese Medicine: cooling down the internal heat and relief summer heat, eliminate inflammation, nourish blood and promoting Qi circulation, “tonify” kidney and liver and purify eyes.

Put the roasted pork into pot, boil with water.

While waiting for it to boil and soften, prepare the bittermellon, cut it into half the long way, scoop the seed out with spoon, slice them to 1cm thick. Add them to the pot.

Add salt and fresh lemon juice. Bitter goes really well with sour, improves the taste. Once the bittermellon colour darken, turn off the stove, ready to serve.
