Ingredients

Serves 4 to 6 servings
  • White Pozole
  • 1 bagpre-cooked hominy
  • 2.2 lbspork (leg, flank, backbone, head, or bones) (about 1 kg)
  • You can substitute part of the pork with chicken breast
  • 21 cupswater (5 liters)
  • 1/4onion
  • 1garlic clove
  • 1 teaspoondried oregano
  • Salt to taste
  • Chicken bouillon powder to taste
  • Red Sauce
  • 5guajillo chiles
  • Pinchground cinnamon
  • Pinchground cloves
  • Pinchground cumin
  • Pinchground black pepper
  • 3garlic cloves
  • 1/4onion
  • 1/4 teaspoonsalt
  • 1 tablespoonchicken bouillon powder
  • Toppings
  • 1 cupiceberg lettuce, very thinly sliced (about 1/4 head)
  • 1/2onion, finely chopped
  • 1 cupradishes, chopped or sliced
  • 2avocados, diced
  • Dried oregano
  • Tostadas
  • 1 cupthick sour cream (about 1/4 liter)
  • Limes
  • Pork rinds (optional)

    Rinse the hominy and remove any black tips. Clean the meat. In a large pot, add the water, hominy, meat, onion, unpeeled garlic clove, and oregano.

    When it starts to boil, let it cook for 15 minutes, then add salt. Continue cooking until the meat is tender. Once cooked, remove the meat from the pot and let the hominy keep cooking. If you used chicken, take it out before the pork since it cooks faster. Let the meat cool slightly, then shred it.

    Meanwhile, remove the seeds from the guajillo chiles and place them in a saucepan with water to soften. In a blender, combine the onion, garlic, cinnamon, cloves, cumin, black pepper, salt, bouillon powder, softened chiles, and a little of the cooking water. Blend until smooth.

    Strain the sauce and add it to the broth. Continue cooking everything together until the hominy is soft and has burst open.

    Serve hot. Top with lettuce, radishes, onion, avocado, lime juice, a little dried oregano, and pork rinds if desired. For extra heat, add chili powder or chile de árbol salsa. Serve with tostadas. Enjoy!
