Mix maida, suji, salt, and ghee all together, and make a soft dough.
Keep the dough aside for a minimum of 30 mins. - 2
Take a pan Then add besan and roast it for 2mins. Then add all spices to it. When everything gets roasted add the dal mixture to it. And cook it for another 8-10 mins. Then keep it aside so that it's cool down. Then make small balls of dal masala.

Back to the maida dough. Divide the dough into 4 equal parts. Using your fingers, make Katori like shape of the dough and fill it with one ball of dal masala.

Roll it with the help of your palm, and squeeze it into the shape of a kachori.

Take oil for frying it kachori. Heat it on medium to high flame.

Pour the ready kachori into the oil. Make sure the oil should not be too hot, otherwise your kachori remains kaachi.

Fry the kachori till it becomes goldenish brown. And served Hot with Kadi or chutney.
