Zarda

Zarda is a traditional boiled sweet rice dish, made with saffron, milk and sugar, flavoured with cardamom, raisins, almonds.. The name Zarda comes from Persian word 'zard' زرد meaning 'yellow', as traditionally yellow food colour is added to it. Bringing the prefect yellow colour is the game. It is occasionally served after the main course.
The other addition to this dish is a variety of colours and dry fruits and "murraba". It is sometimes decorated with boiled eggs too.
I prefer the traditional yellow colour zarda with as much less material as possible. I usually add coconut slices, almonds and raisins only. They give a beautiful addition to the yellow rice!
About the sugar: I really like a normal quantity of sugar in this rice, so the measurement is standard one, if you like more or less sugar just adjust it accordingly.

In a big pot, bring water to boil, add soaked rice and par-boil them.

Strain and keep aside.

In a wok add 3-4 tbsp ghee, add cloves and cardamoms and sauté them for a minute. Then add milk and sugar.

Keep stirring the sugar till it dissolves completely. Then add the raisins. Add food colour and mix well.

Add boiled rice to it. Mix well and carefully without breaking the rice. Cover and cook on low flame for 7-8 mins.

Add some cream and cover it with rice, add almonds and cover and let cook again for 2-3 mins. This step is totally optional. It gives a crumbly creamy texture and nice taste.

Now open the lid and give 5 mins rest. Then softly mix the rice inwards.
