Fish monger had clams this week and decided to make this easy recipe with some leftover fish stock.

Fish monger had clams this week and decided to make this easy recipe with some leftover fish stock.

Fine chop the garlic and the onions. Add the olive oil in a pan. Add the garlic while the oil is still cold. Give it a couple of minutes and add the onions.

Once the onions are soft, add the paprika. Mix it with the onions and garlic. Add the white wine and allow a couple of minutes for the alcohol to evaporates. Add the fish stock. Add salt and boil for a 3 minutes. Add clams and cover the pan immediately. Clams should open straight away.

Just after 2 minutes, you can serve them. Add fresh parsley for garnish. Better to serve with bread to dip in the sauce!
