Ingredients

  • Chicken Breast Chả
  • 600 gramschicken breast (or mix 400 grams breast + 200 grams thigh for more moisture)
  • 1/2onion
  • A fewbetel leaves
  • 2-3shallots
  • Marinade:
  • oyster sauce
  • fish sauce
  • five-spice powder
  • seasoning powder
  • sugar
  • annatto oil
  • Dipping Sauce
  • Green papaya + carrot
  • Water
  • Basic seasoning:
  • fish sauce
  • salt
  • sugar
  • lime (or vinegar)
  • Herbs to serve
  • Fresh or dried rice vermicelli (here I used dried gac vermicelli)

Steps

  1. 1

    Grind the chicken with onion, shallots, and betel leaves until smooth.

  2. 2

    Marinate the ground meat with oyster sauce, five-spice powder, seasoning powder, and sugar to taste.

  3. 3

    Shape into patties and brush with annatto oil for a nice color.

  4. 4

    Grill each side at 356°F (180°C) for 10-12 minutes using an air fryer. If you don't have an air fryer, you can fry them in a pan.

  5. 5

    Prepare the dipping sauce according to your family's taste.

  6. 6

    While waiting for the chả to cook, boil the vermicelli and prepare the herbs.

  7. 7

    The result after 1 hour of "diving into the kitchen"
