Delicious, super soft fritters……. It’s Sugar Palm Fritters.
Cooking Instructions

Take Sugar Palm Fruit. Remove the cover from the ripe palm. Then divided it as per seeds using hand.

Now squeeze out the juice from palm seeds with your hands, by adding water in little parts. Dont add too much water at a time.

Extracted pulp put to high flame.

Bubbles will appear and gradually disappears as it is cooked. Cook for 4-5 minutes.

Add sugar and cook under medium flame for 4-5 minutes, the mixture starts thickening, shiny and smooth.

Freshly extracted and cooked pulp, take 2 cups of pulp, add Sugar or a little more if want more sweetness.

Add maida + semolina as per requirement and allow to rest for 15 minutes.
A thick yet pouring consistency batter is required for the batter. - 8
Heat oil in a kadhai, add sufficient oil, and allow oil to heat lightly, then start dropping batter with help of a spoon and deep fry under low flame.

Flip the balls and fry till golden brown, fritters are ready.

Fritters are ready.

Serve hot or at room temperature, both tastes good.
