Amaranth is an English name of Rajgira. Rajgira means raj= royal, gira= grain - A royal grain! It is also known as 'Ramdana', meaning God's own grain.
The word 'Amaranth' is derived from the Greek term 'Amarantos' which means “one that does not wither”.
Amaranth is high in protein and has an abundance of nutrients like calcium, iron, magnesium, phosphorus and potassium. Also, this is the only grain to have vitamin C. It's also gluten-free flour so full of health benefits.

Ingredients

  1. 1 cuprajigra flour
  2. 1/2 cupghee
  3. 1/2 cupsugar
  4. 1 tspgreen cardamom powder
  5. As required Water
  6. Garnish: cashew & almonds

Cooking Instructions

    Take a kadhai put rajigra flour and ghee and mix it well. On low flame keep on stirring. Ghee will melt and coat the flour well and become bit liquidy.

    See the change in colour and feel the aroma as its roasting process is being done with patience. Keep on stirring. After 10-12 minutes when it gets brownish add water and sugar and keep stirring. It will become thick now but don't leave the pan.

    At one stage, you will find that ghee is released and our halwa has left the pan. Now its signs that it's done. Add cardamom powder and taste sugar, you can add if required. Put off the flame and serve in a bowl with garnish.
