Mediterranean Style Seafood Pasta

Steps

Cook pasta in salted boiling water till cooked but firm. Rinse and set aside. Save some of the starch water.

Heat 30 ml Olive Oil in a wok till shimmering. Cook the Seafood 2 to 3 minutes per side, till the Shrimp turn pink. Transfer Seafood to a side plate and set aside.

Add 15 ml Olive Oil, Onion and Baby Marrows. Fry the Onion, Garlic and Marrows till Onion is translucent.

Add Garlic, Salt, Black Pepper, Oregano and Chili flakes and mix through. Fry till Garlic is fragrent.

Add Wine to the wok and scrape the bottom clean. Add Lemon juice and Lemon zest and simmer for 5 minutes.

Add Tomatoes and Parsley and stir for 30 seconds. Add seasoning if required.

Add the Pasta to the wok and stir through enough of the starch water to make the sauce creamy. Return the Seafood, remove from heat and allow to rest for a few minutes.
