Masala vadai

This is a south Indian delicacy which is made for auspicious occasions.
Steps

Soak chana dal for 4 to 5 hours. Remove water from the dal keep it aside.

Now in the mixer jar add chana dal, ginger, fennel seeds, carom seeds, green chilies, and cumin seeds. Blend to a fine paste without adding water.

Take out the batter in a mixing bowl. Add chopped coriander leaves, curry leaves, red chili powder, turmeric powder, asafoetida.mix well.

Add salt and make vadai by greasing your hands with oil or water. Heat oil in a deep pan. Fry vadai till golden brown on medium to high flame. Serve with coconut chutney and sauce.

I don't like to use baking soda.if you like you can add. I just mix batter for 5 minutes with my hands to make it light.
