Start by adding the mustard seeds to warm oil and coom for half a minute being careful not to burn

Add the grated onion and garlic cook this until coloured this is the start of layering the flavours

Once done add all your spices curry leaves kasmiri chilli powder and coriander

Then turmeric and cook them through around 2mins should do it

Then add the tomatoes chilli and tamarind

Cook until the tomatoes have cooked and broken down you may need to add a splash water keep stirring you don't want them spices to stick and burn

When it's reduced and rich add your fish and cook for a further 5 mins, try not to move the fish too much to prevent it breaking

Serve with fluffy rice
