Vada pav is a very famous vegetarian street food of Mumbai and most favourite roadside snack.
Steps

First, in a pan add 2tbsp oil and heat it. Add mustard seeds when it started to splutter add green chilies and curry leaves then add turmeric powder.

Add boiled and mashed potatoes mix and add salt, and lemon juice mix well and cook for 3-4 minutes. Transfer to a plate and allow to cool completely.

Meanwhile, the potatoes turn cool take another pan. Add 1 tsp oil when oil gets hot add garlic cloves and roast for a few seconds, add sesame seeds roast for 30 seconds then add peanut, red chilies, and salt. Stir and roast all for a minute.

Now add coconut roast all together for a few seconds. remove from the gas and allow to cool. then grind it in a grinding jar. Keep aside

Take the potato mixture and make small round shape balls from it and keep them aside.
In a mixing bowl add gram flour, salt turmeric powder, and red Chilli powder mixed well. and gradually add water. Make a semi thick batter. - 6
Heat oil in a kadhai, dip the potato balls in the batter and fry all on medium to high flame untill they turn golden brown. keep them in absorbing paper.

To assemble the vada pav make a slit in the pav, but make sure they are attached from one side.put some garlic chutney in middle then Stuff a potato ball in each pav. Add some more chutney on top of the vada.

Press it down a bit and serve with green chilies.
