Ingredients

Serves 27 servings
  1. 27 pieceschicken leg quarters
  2. 16 quartswater (15 liters)
  3. 1onion
  4. 2 clovesgarlic
  5. 6dried guajillo chiles, seeded
  6. 4dried ancho chiles
  7. 1 stickcinnamon
  8. 3whole black peppercorns
  9. 1 pinchcumin
  10. 3avocado leaves
  11. 2 tablespoonswhite vinegar (30 ml)
  12. 9 poundsnopales (cactus paddles) (4 kg)
  13. Salt, to taste
  14. as neededAluminum foil,

Steps

2 hours 30 minutes
  1. 1

    Cook the chicken in the water with the onion and garlic.

  2. 2

    Boil the chiles with the spices and vinegar, then blend and set aside.

  3. 3

    Cut the nopales into thin strips and cook them.

  4. 4

    Cut large pieces of aluminum foil and fold to form pouches.

  5. 5

    Place the chicken inside the foil, add the chile sauce and cooked nopales.

  6. 6

    Repeat until all the chicken is used.

  7. 7

    Serve with spaghetti or another side dish.
