Air fryer crispy kale and roasted aubergine crisps with jambon and heritage tomatoes - energy saving

I decide to give the air fryer another go today for a late lunch and experiment with the veg to hand in the fridge. I found a recipe from @cookingwithyui for kale crisps and wanted to see if I could make aubergine crisps as well. Both turned out great

I decide to give the air fryer another go today for a late lunch and experiment with the veg to hand in the fridge. I found a recipe from @cookingwithyui for kale crisps and wanted to see if I could make aubergine crisps as well. Both turned out great

Remove your curly kale from its stalks and roughly tear. drizzle over a tiny tiny amount of oil (maybe even less than 1/2 teaspoon) or use oil spray to very lightly coat the kale. Place in the air-fryer and cook at 180c for just 5 minutes!! Remove and sprinkle with a little salt. You need just a small pinch. It's done - crispy, crunchy and delicious.

Thinly slice your aubergine and coat with a little drizzle of oil and season with some salt. Try other herbs if you like here. Place in the air fryer for 15 minutes and you will have crispy-ish aubergine crisps.

Serve up the kale and aubergine crisps with the other salad ingredients of your choice. I platted it with Jambon ham and heritage tomatoes as that was what was in the fridge. It was a great pairing.
