Make the crêpe batter: In a mixing bowl, add the flour and make a well in the center. Add the egg and a pinch of salt, then gradually mix in the water and milk. Let the batter rest for 1 hour.

Cook the crêpes in a hot skillet lightly sprayed with oil.

For the béchamel: In a saucepan, whisk together the milk and flour. Season with salt, pepper, and nutmeg. Cook gently until thickened. Stir in the shredded cheese and mix well.

Spread the béchamel over 4 crêpes. Add half a slice of ham to each.

Roll up the crêpes.

Heat a skillet with the oil. Place the crêpes seam side down and cook for a few minutes on each side until golden brown.
