Quail Egg and Baby Eel Baskets
Simply delicious!!!
Steps

Place the empanada wrappers upside down in aluminum molds to form baskets, and bake in the air fryer at 350°F for 5 minutes.

Add a splash of oil to a pan and fry the sliced garlic. Remove and set aside.

In the same oil, sauté the baby eels with a pinch of salt, and distribute them in the baskets.

Add a splash of oil to the pan, fry the eggs, and place them on top of the baby eels.

Add a pinch of salt to each egg, distribute the garlic, and sprinkle with parsley.

TIP:
Fry the eggs lightly without setting the yolk, so you can break it over the baby eels and mix them.
