The Guyanese galette is a traditional pastry from Guyanese cuisine. It’s a Creole variation of the galette des rois, enjoyed as a dessert from Epiphany through the entire Carnival season in French Guiana.

Combine all the dough ingredients in a bowl. Knead until you have a smooth dough. Chill in the refrigerator for 1 hour.

Divide the dough in half and roll out one half. Line a pie pan with the rolled dough.

Spread the pineapple jam over the dough. Place the fève (small charm) inside. Roll out the other half of the dough and cover the jam. Seal the edges by pressing gently.

Brush the top of the galette with a little milk. Decorate as you like.

Bake for 25 minutes at 350°F (180°C). Let cool on a wire rack.
