Ingredients

  1. 1small cabbage (about $0.50)
  2. 9small tomatoes (about $0.50)
  3. 4shallots
  4. 4 tablespoonsolive oil
  5. 1 tablespoonfish sauce
  6. 1scant tablespoon organic brown sugar

Cooking Instructions

    Wash the tomatoes and cut them into small pieces.

    Peel the shallots, crush and finely chop them, then add to a pan with olive oil. Turn on medium heat. Sauté the shallots for 1 minute, then add the tomatoes and stir-fry for 8 minutes or until they are soft and form a sauce.

    While stir-frying the tomatoes, wash the cabbage, removing any damaged or wilted outer leaves. Cut the cabbage in half lengthwise, then slice thinly crosswise. Once the tomatoes are soft, add the cabbage and stir-fry for about 5 minutes, then add the fish sauce and sugar and continue stir-frying for another 3 minutes, or until the cabbage is tender to your liking, then turn off the heat.
