Ingredients

11 cups
  1. 200 gramssago pearls
  2. 4-5 tablespoonssugar
  3. 3 1/3 cupswater (about 800 ml)
  4. 2large mangoes
  5. 1/4 cupsweetened condensed milk (to taste)
  6. 1 packagecoconut jelly
  7. 1 canevaporated milk
  8. 1 1/4 cupsUHT milk (about 300 ml)
  9. 1/3 cupsweetened condensed milk (to taste)
  10. Topping:
  11. Grated cheese and basil seeds to taste

Cooking Instructions

    Boil water to cook the sago pearls. Once boiling, add the sago pearls and sugar. Cook for 5 minutes, then turn off the heat, cover the pot, and let it sit for 30 minutes. Cook again for 7 minutes.

    Prepare the coconut jelly according to the package instructions. Once set, cut into cubes.

    Peel and wash the mangoes, then place them in a chopper or blender. Add sweetened condensed milk (adjust sugar to taste) and blend until smooth. If the mangoes are already sweet, you can skip the sweetened condensed milk.

    In a bowl, mix evaporated milk, UHT milk, and sweetened condensed milk until well combined. Taste and adjust as needed, then pour into a large container with the sago pearls and coconut jelly. Add the creamy milk mixture.

    Prepare cups (I use 300 ml size). Pour the blended mango into the cups as desired, then add the jelly and sago pearls. Top with grated cheese and basil seeds. Store in the refrigerator.
