Golden yam fried in egg with sauce🍽

I made this for break fast,😁😅. Had a late break fast that day because I did not start early & I said I must make a sauce to pair my yam with, because I don’t want to have it with paprika so that was how it went! Any way I enjoyed it so much! Stay blessed fam🤗❤️

Peel, cut & wash yam sprinkle some salt add water transfer into a pot on heat & cook on high heat until soft & tender. Then strain water away & set aside. In a bowl crack eggs add in curry & thyme. Add the chopped onions & scallions together with the seasoning cubes. Whisk every thing together.

Heat up some oil in a pan when hot enough dip the yam pieces in the egg mixture cover them with the egg mixture then into the hot oil & fry after some minutes flip to the other side to fry until golden color is achieved then remove from oil & repeat the process until yam is finished.

For the sauce I grated tomato, red bell pepper, onions & pound the scotch pepper using motor & pestle to avoid the heating sensation it has. I add the mixture into a pot cook for a couple of minutes add in some oil continue frying then I added the sliced cabbage followed by salt, seasoning cubes, curry & thyme. Mix every thing well then I added the sliced spring onions cover & allow to cook for 2 more minutes then I off the heat & serve.😋😋😋🍽
