  • 2 cupsgrated yellow pumpkin
  • 1/2 cupbrown sugar
  • 1 cupmilk
  • 1 teaspooncardamom powder
  • 1/4 teaspoonsaffron
  • 1 pinchsalt
  • 1/4 cupghee
  • 20cashews
  • 1 tablespoonraisins
  • dessert, Halwa

    Keep the necessary items near the cooking area

    Keep the necessary items near the cooking area. Dissolve saffron in 2 tablespoon of hot water to get good color

    Pumpkin is hard to get. Keep in the microwave for 2-3 minutes. It is easy to cut it. Remove the rind, seeds, fibers etc. Grate the flesh.
    I cooked grated pumpkin in a microwave safe dish with the lid on in the microwave for 5 minutes. Then added milk ; cooked uncovered in microwave for 5 minutes. Stir in brown sugar and microwave for another 5 minutes; sugar liquefies the contents a little, later, the halwa thickens

    Add ghee and stir. Microwave for another 5 minutes; Add a pinch of salt.
    After 4-5 minutes add saffron, cardamom powder. Mix everything together and add ghee after 3/4 of the halwa thickens. after a few minutes, ghee separates. Halwa is ready

    Take the halwa out of the microwave, Transfer to a serving bowl

    I roasted cashews and raisin with 1tsp ghee in microwave for 2 minutes
    Add roasted cashews and raisins to the bowl. Halwa is ready to taste and share. Enjoy

    On the stove top: Heat 1 tbsp ghee in a heavy-bottomed pan over medium heat, 1 minute. Add the grated pumpkin, cover and stir often to prevent sticking to the pan. Cook for 5 minutes. Add milk, stir, cook for 5 more minutes. Stir in brown sugar. Sugar dissolves and the contents liquefy a little. Add salt and stir for 4-5 minutes then add saffron and cardamom powder. Reduce flame. Mix everything together; add remaining ghee. Continue cooking until ghee separates. halwa has right consistency
