A lovely looking Chutney with Fresh Coconut and roasted Peanuts is an interesting combo and a good variation to the yummy Fresh Coconut Chutney from down South.
It goes well with South Indian Breakfast dishes as well as a lovely Dip for many an excellent Snack items too.
The best part is that it's an easy one. Tempering gives it a unique flavour and aroma. It compliments all the amazing Breakfast dishes from the South.
Lemon juice can be used too in place of dry Tamarind. The choice is all yours.

And not only that, let me tell you that it makes for an excellent Sandwich spread too. Because of it's creamy texture, it's absolutely preferable as a spread. From Sandwiches to Rolls and Wraps, it's amazingly awesome.

Ingredients

5 minutes
7-8 servings
  • 1 cupCoconut chunks
  • 1/4 cupPeanuts
  • 1 tspSalt
  • 2Green Chillies
  • 2-3Garlic Cloves
  • 2 tbspchopped Coriander Leaves
  • 1 tspTamarind or Pakki Imli (optional)
  • as neededWater
  • FOR THE TEMPERING!
  • 2 tbspOil
  • 1 tspBlack Mustard Seeds
  • 1 sprigCurry Leaves
  • 2-3Dry Red Chillies
  • 1/8 tspAsafoetida or Hing

Steps

5 minutes
  1. 1

    Dry roast the peanuts on a low heat until the raw smell fades away. Grind all the ingredients listed under making the chutney. Use only minimal water as needed. Do not make it watery.

    Heat oil. Next add the mustard seeds and the curry leaves along with the dry red chillies. Season the chutney with this tempering. Mix well and serve.

    A piece of tamarind can also be used if desired. Lemon juice also can be used instead. Though it is good on it's own, it's totally upon one's choice and preference. Enjoy! Yum!
