Tel pani na muthiya/ Lauki methi muthiya

Tel pani na muthiya is a popular Gujarati dish which is named after the technique by which it is cooked. Muthiya is put in the hot oil and then the pan is covered with water filled thali so that it can cook on medium heat soft from inside and crispy from outside. It tastes really good served with a hot cup of tea or coffee. It can even be served as a light meal along with hot milk, chutney or pickle.
This muthiya is prepared using kanki korma flour which is easily available at any flour mill in Gujarat . It is a coarse flour prepared mixing 1 cup of short grain rice, 1/2 cup tuver dal, 1/4 cup chana dal and 1/4 cup udad dal. You can mix everything and grind it together at a flour mill in bigger quantities and store it to use it as required. You can even use this flour to make handvo, dhokla, chilla etc.

Add grated dudhi and methi or coriander leaves in a bowl along with ginger, green chilli, garlic paste, salt, turmeric and oil. Mix everything well and start adding kanki korma flour to it. Add 2 to 3 tbsp of water if required. Mix everything well. Cover and keep it for 30 minutes.

Now heat oil on medium heat in a non stick pan and with the help of your fingers make small muthiya straight into the pan. Now cover the pan with a waterfilled thali and cook it on medium heat until golden brown on one side. Then turn it over and again cover it with the water filled thali and cook it on the other side until golden brown.

Serve tel pani na muthiya hot along with tea or coffee. It can even be served as a light meal along with hot milk, chutney or pickle.
