The name of the Dish sounds alluring but in Thailand this Son-in-Law Eggs is very popular not only amongst Son-in-Laws but also children. Kai Leuk Kuey literally means Son-in-Law. But, how this name came about no one knows but what Thai legend says is Mother-in-Law wanted to punish its Son-in-Law for illtreating her daughter. The Son-in-Law was invited and offered this deep fried egg salad which is tangy, sweet and spicy giving a hidden hint to Son-in-Law to be careful or will be punished. It’s very healthy, popular and is a must try at home.

Steps

For Eggs - in a pan boil water, gently add the eggs on room temperature and boil for 5 mins. Immediately put in cold water while you get the sauce ready

Peel the eggs and dry them on kitchen towel. Heat oil in a pan and add the eggs, deep fry until golden in colour on all sides, set aside

For Sauce - in a pan add grated Palm sugar, Tamarind juice, little water and bring it to heat.

Add lemongrass and Chilli flakes, thicken the sauce and set aside to strain. Discard the lemongrass and Sauce is ready

Cut the Fried eggs into half.

For Plating - in a bowl add the halved fried eggs, drizzle the sauce, garnish with Red chilli, coriander leaves and enjoy 😊
