My Moma’n love, loved this salad at one of our local cafeteria style restaurants, when she developed diabetes, she’d still eat it and it would drive her sugar sky high. So, I, being the bestest daughter’n love, started making it for her without the “sugar driver upper”.
I took this salad to a church social and it got rave reviews.
Hope y’all like it too!

Ingredients

  1. for dressing:
  2. 1/2 cupwhite wine vinegar
  3. 1 TbspMonkfruit sweetener or 1 Tbsp sugar
  4. 2 tspsalt
  5. 1/2 tspcelery salt
  6. 1 tspdry mustard
  7. 1/8 tspblack pepper
  8. 1/4 tspred pepper flakes (I didn’t use)
  9. Fresh Veggies:
  10. 3tomatoes, diced
  11. 2cucumbers, halved and sliced, depending on the size you prefer
  12. 1bell pepper, chopped, (I used different colors for variety)
  13. 1purple onion, diced or sliced, your preference
  14. 3 stalkscelery, sliced

Steps

  1. 1

    Whisk dressing together until well blended. Taste add more of whatever you prefer. I always add more celery salt and black pepper.

    Place all veggies in large bowl, using your hands, mix them all together. I tried using a wooden spoon, had better results with my hands, I wore clean kitchen gloves.

  3. 3

    Give dressing another good whisk then pour over veggies. Mix all together.

  4. 4

    For best results refrigerate overnight, or if you’re in a hurry, at least 1 hour before serving. It’s best if stored in an airtight container so you can give it a topsy turvey shake periodically. Best served cool.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
