Baingan Bhaja is a popular Bengali side dish. This traditional dish is made with plenty of spices and comes together quickly and easily. It’s very delicious and makes a great addition to any meal.

First, wash the eggplants and cut them into round slices.

Add salt, turmeric powder, chili powder, garlic paste, and 1 tablespoon mustard oil to the sliced eggplants. Mix well to coat evenly.

In a separate bowl, add water to the chickpea flour to make a thick batter.

Coat each eggplant slice with the chickpea flour batter. Heat oil in a skillet and fry the eggplant slices on both sides until golden brown.

Your Baingan Bhaja is ready. Serve hot with roti, paratha, or rice.
