A super delicious and a healthy one for special occasions and Festivals. And also for the weekends or the holidays. Actually there isn't any reason to whip up our favourite Sweets on just about any day. This Burfi is one such delightful Sweetmeat that my family loves to the core. This melt in mouth and juicy Fresh Coconut Burfi is absolutely lip-smacking and a must have whenever you crave for something sweet and homemade. If you Fresh Coconut on hand, then this can be done in a jiffy. Infact it doesn't even require loads of Ghee. It gets cooked in it's own juices. That's the best part of it. The Sugar can also be adjusted accordingly. Here I have used some Organic Jaggery powder and hence the colour as such. Beautiful in looks and healthy too plus with all the goodness of Coconut, this one is for sure a not to miss one on any given day.

Add the grated Coconut to a grinding jar to get a coarsely done powder.

Heat a kadai with Ghee. Add this Coconut powder to it and roast on a low heat until the moisture gets evaporated for about 12 minutes. Then add Cardamom and Jaggery powders.

Mix well and keep cooking until everything appears to be a glossy and a shiny mix. The Jaggery powder melts and gives it a unique colour as well as flavour. It starts leaving the sides of the kadai. This is when you can take it off the heat.

Grease a plate and pour the mix in it. Shape it accordingly. Garnish with chopped Almonds or any Nuts of your choice. Leave it to set on the kitchen counter or in the refrigerator for an hour. Cut into small Squares or Rectangles. Enjoy!
