Boil eggs in a pan with 1 tsp salt for 8 minutes. Set aside for 5 minutes and then peel the shell.Make slits with a knife to prevent eggs from spluttering in oil.Marinate the eggs with salt,pinch of turmeric and red chilli powder.Heat 1tbsp oil in a pan and fry the eggs over medium flame till the crust is light golden.Set aside.

Clean,chop finely and wash some leftover spinach leaves.Strain out all water in a strainer. In the remaining oil sprinkle minced garlic and saute till aromatic.Add the chopped spinach,1/4 th tsp salt and pinch of sugar.Saute till moisture dries up.Set aside.

Make a paste of 1 roughly chopped onion,green chilli,curd and malai.Add 3-4 cashewnuts.Grind to a smooth paste.Heat 1 tbsp more oil and 1 tsp ghee. Sprinkle cumin seeds and half crushed whole garam masala.When they splutter, add 1 finely chopped onion and saute till golden brown. Add turmeric and Kashmiri Red Chilli Powder,cumin coriander powder,ginger garlic paste and the ground onion paste.Add salt and sugar to taste.Fry till oil leaves sides.

Add the fried eggs and kasoori methi.Toss and add 2 cups water.Boil till the gravy is thick.Add fried spinach leaves and garam masala. Toss to combine well.

Garnish with chopped coriander and slit green chillies.Drizzle some fresh cream and serve hot with roti, paratha,naan or jeera rice.
