A winter dish that's also perfect for special occasions—unique and very delicious!

First, wash the rabbit and place it in a large bowl with the vinegar, enough water to cover, whole peppercorns, and bay leaves. Let it marinate in the refrigerator for at least 8 hours.

Peel the onions. Leave the garlic cloves whole and unpeeled.

After marinating, pat the rabbit dry and place it in a large pot with olive oil. Sear on all sides for a few minutes.

Add the onions and sauté briefly, then add the garlic. Pour in the balsamic vinegar, add the spices and bay leaves. Season lightly with salt and pepper.

Blend the tomatoes and add them to the pot, along with about 4 cups hot water (about 1 liter), enough to cover everything. Simmer for 2 hours, or until the onions are soft and the meat is tender.

Taste and adjust salt or pepper if needed. Serve and enjoy with rice, French fries, or fresh bread!
