Ingredients

10-12 crêpes
  1. 1 2/3 cupsrice flour (200 grams)
  2. 1/3 cupfonio or cassava flour (50 grams)
  3. 2 cupssoy milk (500 ml)
  4. 3eggs
  5. 1 packetvanilla sugar
  6. 1 tablespoonvanilla extract
  7. 1 tablespoonspiced rum

Steps

  1. 1

    In a mixing bowl, whisk together the eggs, vanilla sugar, both extracts, spiced rum, and soy milk in that order.

  2. 2

    Add the flour and whisk. For a smooth, lump-free batter, blend with an immersion blender. Cover and let the batter rest for 30 minutes.

  3. 3

    Cook the crêpes in a well-heated skillet.
