Begun or baingan bhaja is a Bengali vegetarian recipe of shallow-fried eggplant. Crunchy outside, soft inside.
Steps

Wash and make thin slices of brinjal.

Take all the ingredients except oil and add ¾ cup of water and make smooth but slight thick batter.

Heat oil in frying pan. Coat the brinjal slices in the batter and shallow fry in the pan,till crisp and golden in colour

Serve hot with rice or roti/chapati/luchi/Puri.
