
Banana Bread Muffins

This is a great way to use up overripe bananas. These bake much quicker than banana bread and I prefer them to regular banana bread. You can adjust the amount of chocolate chips and cinnamon to your liking. These muffins are best served warm.

This is a great way to use up overripe bananas. These bake much quicker than banana bread and I prefer them to regular banana bread. You can adjust the amount of chocolate chips and cinnamon to your liking. These muffins are best served warm.
Steps

Preheat oven to 180°C.

In a medium-sized bowl, mash bananas with a fork. Transfer mashed bananas to a larger bowl.

Mix in the vegetable oil, brown butter and sugar and whisk thoroughly.

Add eggs, salt and vanilla extract and mix

Sift the flours, cinnamon and baking soda into the wet mixture and combine. Be careful to not overmix.

Lastly, fold in most of your chocolate chips, leaving some for topping.

Line a muffin pan and fill the cups halfway. Top with the remaining chocolate chips and bake for 15-20 minutes, or until a toothpick comes out clean.

Take the muffins out and let them rest for at least five minutes before removing from the pan.
