Another most simple yet flavourful dish for everyday meals this Season. You will just love it's amazing texture and flavour both.
With Tomatoes added, it becomes a lovely looking nutritious Curry apt for mealtimes on any day.
This is a simple Curry with just 3 main ingredients including the Onions and with a few spices available in every pantry.
I personally enjoy this with Phulkas. But let me tell you that it's the best with Rice as well.
Though it's so simple, it's absolutely delicious. I have used Green Eggplants or Brinjal here along with Kasuri Methi or Dry Fenugreek Leaves which add that perfect touch to this lovely Curry.

In a pan, heat oil and add the ginger-garlic green chilli paste Saute for a minute and add the sliced Onions. Saute until translucent. Next add chopped Tomatoes. Cook until soft and mushy. Next, add the Brinjal pieces with all the powdered spices. Saute until nicely done. Also, add half of the chopped Coriander Leaves and a cup of water too.

Cover and cook on a low heat for the next 20-25 minutes. Do not add too much of water. Add a little to facilitate easy cooking of them. Also add in Kasuri Methi or Dry Fenugreek Leaves just about 5 minutes before taking it off the gas. After done, check for Salt and garnish with more of chopped Coriander Leaves. That's it.

It's all ready to be served with your favourites. Rice and Rotis both go well with this. Relish this awesome dish well garnished with chopped Coriander Leaves and serve hot as a delicious side dish to many an important meals. Yum! Enjoy!
