APRICOT-ALMOND & CHEESE CANAPES

These tiny treats are a great appetizer of finger food to serve at parties or brunch. They’re fancy enough for a dinner party, yet easy enough for a weekend snack or even to binge on while having fun with friends without worrying about over-indulgence.
This easy and healthy canapé recipe is sweet, tangy, salty, and herby all at once because of the apricots and cheese.
Feel free to use your favourite spreadable cheese like blue cheese, goat cheese. I am not a fan of blue cheese and goat cheese, for that matter. I used spreadable cream cheese. As for the cilantro, well, that’s the only herb I have on hand all the time. You can use fresh thyme or rosemary. Make as many or as much as you want. These are an easy and impressive appetizer you can whip up in under 10 minutes!
You can use fresh apricots as well. Just broil them first. To broil the apricots, split them in half, and remove the pits. Set your oven’s broiler to high. Brush the apricots liberally with honey, and pop them under the broiler for 10-15 minutes, checking on the frequently to prevent burning. Allow them to cool until you can easily handle them to fill with the cheese.
