Vaal Beans with Potatoes

Hyacinth Beans or Avare Beans or Val Beans or Avarekai are the fresh produce from the State of Karnataka in the Months of October to December. Loaded with a ton of essential nutrients, these are a treat to the tastebuds. Though the young and Green pods can also be used in cooking, mine were a little older and so I just used the Beans in this lovely looking Curry along with Potatoes.
I make it a point to take it with me if iam not here.
These are rich in Minerals like Iron and Calcium plus loaded with Vitamins A, C, B1 and B2. They help in promoting heart health and helps in weight loss too. These Beans have a unique earthy flavour that fits well with Winter cooking. And that is what I love about them. In this Season, it's a must have if you are in the Country.
People tend to remove the outer covering of the Seed as well but that's not required. And one more thing to remember is that there is no need to use a pressure cooker. They get cooked very easily just on the stove top.

Ingredients

25-30 minutes
4-5 servings
  • 500 gmVaal or Hyacinth Beans
  • 2cubed Potatoes
  • 2chopped Onions
  • 1 tspGinger Garlic Green Chilli paste
  • 2-3 tbspOil
  • 1/2 tspCumin Seeds
  • 1/8 tspAsafoetida or Hing
  • 1 tspKashmiri Red Chilli powder
  • 1/4 tspTurmeric powder
  • 1 tspCoriander powder
  • 1small bunch chopped Coriander Leaves
  • 1 tspLemon juice

Steps

25-30 minutes
  1. 1

    In a pan, heat oil and add the cumin seeds and asafoetida. Let them splutter a little. Now add ginger garlic green chilli paste. Saute well for a minute. Then add the finely chopped onions. Let them become a bit translucent and light pinkish in colour. Now it's time to add the cubed potatoes. Cover and cook for about 10 minutes or until fork tender.

    Now is the time to add the val beans. Also add the powdered spices too. Mix well. Cover and let it cook for about 15 minutes. That would be more than enough. That way these beans maintain their crunch too. But keep stirring a bit at regular intervals just so that the curry doesn't burn at the bottom.

    Do not add water. As the beans are fresh and much tender, they get perfectly roasted in no time. Squeeze some Lemon juice for the tanginess after done if desired. Enjoy!

    Serve it as a lovely side dish garnished with chopped coriander leaves. Yum!
