Steps

Peel the potatoes and break them into chunks (do not cut). Cut the green pepper into pieces about the size of your thumb.

Add the potatoes and green pepper to the pot, cover with water (about 1 inch above the ingredients), and add 1 tablespoon of salt.

Close the Instant Pot and cook for 20 minutes.

After cooking, open the lid and remove most of the broth. Set the broth aside.

Add the shrimp to the pot. They will cook with the residual heat.

Make mayonnaise using the eggs and olive oil.

Gradually add the mayonnaise to the reserved broth, stirring constantly to prevent curdling.

Pour the broth with mayonnaise back into the pot and stir gently.

Serve with a squeeze of lemon.
