Wash, peel, and chop the potatoes, carrots, and cauliflower. Chop the tomatoes and green chili in a chopper. Finely chop the cilantro leaves. Grate the ginger.

Heat oil in a pan. Add cumin seeds and let them splutter, then add the tomatoes and green chili along with all the spices. Sauté until the oil separates from the spices.

Add the carrots, cauliflower, and potatoes, mix well, then add salt and mix again. Cover and cook on low heat for 15 minutes, stirring occasionally. Add garam masala and cook for another minute. Turn off the heat and garnish with cilantro leaves.
