Soak gelatin in water. Put water first and then sprinkle gelatin over it to prevent becoming uneven.
Make Strawberry Puree. Add strawberries and granulated sugar to a food processor and blend until smooth. - 3
Transfer 45g (about 3 Tbsp) of the strawberry puree into a small container. Cover it with plastic wrap (or a lid), and let it sit in a fridge. It will be used later as a strawberry sauce.

Transfer the remaining strawberry puree to a small pot. With stirring, heat it over medium heat. Bring to a boil and then turn down the heat, heat for 3-4 minutes while stirring from time to time.

Transfer to a large bowl. Place the bottom of the bowl in ice water and cool to 25°C / 77 F (until it thickens) while stirring occasionally.

Remove from ice water, add condensed milk and stir well. Add heavy cream and stir well. Add milk in 3 batches and stir well each time.

Melt the gelatin in the microwave at 600W for 10-20 sec. Be careful not to let it boil. Add the gelatin to the strawberry milk mixture and stir well.

Place the bottom of the bowl in ice water and cool it for 2-5 minutes while stirring until it gets thickened lightly.
Strain it, and pour it into glasses. Let it sit in a fridge for 3 hours to set. - 9
[Topping]
Chop the strawberry chocolate. Melt it in the microwave. Please heat it little by little. Repeat heating at 600W for 20 seconds about 3 times.
Place a template mat on a tray lined with cake film. Pour the chocolate into the template mat. I used a round-shape template mat (2mm / 0.08 inch thick, and 3.5 cm /1.4 inches in diameter). - 10
Cool it in a freezer for 15-30 minutes. Take the round chocolates out of the mat, and put them back in the freezer. Set aside until just before serving (eating).

Add condensed milk to the heavy cream. Use an electric hand mixer to beat it on low speed until soft peaks form while cooling it with ice water.
Take the strawberry pudding and fresh strawberry puree out of the fridge. Pour the strawberry puree over the pudding. - 12
Pipe the whipped cream, and top with strawberries and chocolate shards. It's all done!
