Jaggery tea

Jaggery Tea or as it is popularly known as “Gur Ki Chai” or “Gur Wali Chai” in Pakistan and India, is a refreshing, spicy tea made by replacing sugar with jaggery and flavoured with spices.
I take my tea and coffee without sugar. I cannot sip sweet tea but this Gur Ki Chai is a whole new cup of tea! And one sip of this tea, had me thinking of making this often…not on a regular basis though.
This tea has a deep earthy flavour from jaggery and tastes delicious. The warming and satisfying feeling that comes with a cup of tea is incomparable.
The jaggery tea is not overtly sweet as sugar is. It is healthier than the regular tea because it has jaggery as a sweetening agent rather than white sugar.
Although the procedure sound simple, and it is, but if not properly brewed, the tea will curdle. This is why tea lovers often shy away from trying out this variant of tea. To avoid this, add the jaggery at the last stage. When added to hot milk, the jaggery curdles.
Jaggery, because of its warming properties, this tea is often consumed during the winter seasons. It is mostly consumed in the rural areas. This tea is great as it keeps us warm, boosts immunity, fights cold and flu, promotes weight loss and has many other health benefits.
The spice mix that is added along with tea leaves can be altered according to preference. Some just use fennel, peppercorns, cardamom, cinnamon, a bit of dry ginger powder to make the masala chai. Whatever your preference, do not omit the fennel a

Slightly crush the fennel seeds, cardamoms and cloves in motor and pestle.

In a saucepan add the water, milk, tea leaves and fennel mixture.

Bring to a boil and aerate a couple of times.

Switch off the flame and just wait for 20 seconds. So that temperature of the tea drops a bit.

Add the jaggery and mix to dissolve the jaggery. Aerate a few times.

Strain and serve hot.
