Mix the flower, water and yeast in a big bowl. Add salt halfway

Cover and let it rest for 30mins

Do a few folds on an oiled workspace. Put back in bowl and rest for 30 more minutes

Now, dump your dough on a generously dusted counter and divide in 8 equal parts. Be careful to not lose too much of the bubbles. Lightly shape in rectangular(ish) forms.

Gently place the dough on a baking tray, and put in a oven preheated to 230 C. Bake for approx. 160 min. You will probably need to do this in two batches.
