A Green delight that goes well with Chapatis and Rotis. This is made in Winters especially when Vegetables are available aplenty. Simple ingredients go into making this Sabzi and tastes so good too. And to top it all, it's a great one for both Lunch or Dinner. And also a filling one for Breakfast as well. It's also a lovely option for Lunchbox ideas.
And it's easily done with minimum of pantry staples as well. This dish is a flavourful one full of the goodness of Winter Vegetables. Beans with Matar or Green Peas would definitely be a great combo this Season. It can be a perfect option for mealtimes. The best part is that it goes very well alongside both Rice and Rotis.
And it's done quite effortlessly too with minimum of pantry staples and readily available everywhere. Tomatoes also can be added to make it more flavourful and juicy but I didn't as I made it for Breakfast today and enjoyed it with Kalonji or Black Seeds Rotis. It was a filling and a delicious Breakfast, I must say.

Ingredients

  1. 1 cupGreen Peas or Matar
  2. 500 gmchopped Green Beans
  3. 1 tspGinger Garlic Green Chilli paste
  4. 2 tbspOil
  5. 1/2 tspCumin Seeds
  6. 1/8 tspAsafoetida or Hing
  7. 1 tspRed Chilli powder
  8. 1/4 tspTurmeric powder
  9. 1 tspCoriander powder roasted
  10. 2-3 tbspchopped Coriander Leaves

Steps

25 minutes
  1. 1

    Heat oil and add cumin seeds along with asafoetida and ginger garlic green chilli paste. Fry for a minute or two.
    Also, add the chopped onions with the powdered spices as mentioned. Saute until translucent.
    And finally, add the green peas to it. Add half of salt according to taste and saute on a medium high heat for almost 2 minutes. Cover with a lid now and allow it to cook further without adding any water.

    After almost 8-10 minutes, add chopped beans. Mix well. Cover and cook for further 15 minutes. Do not cook for a long time. Maintain the crunch of the vegetables. Keep stirring for once or twice in between to ensure proper cooking.

    The crunch can be maintained and it depends on one's own choice. You can increase or decrease the cooking time meticulously. Garnish with lots of chopped coriander leaves. Yum!

    Relish with both rice and rotis on any given day. Though I personally prefer it with rotis for breakfast. Enjoy!
