Bell Pepper & Carrots with Sesame-Miso Dressing

I love sesame dressings! I used golden sesame seeds but feel free to use white or black ones if you prefer.
You can whip this up really quickly in the microwave and the food will still retain its nutrients. I used a microwave set at 700 W. For 3 servings. Recipe by Kanon mama ('-'*)

Cooking Instructions

Cut the bell peppers in half, then slice into long thin strips. Cut the carrots into long thin strips to match the size of the peppers.

Add the carrots to a heat-resistant bowl and microwave for 30 seconds. Then add the bell peppers on top and microwave for a further 30 seconds.

While microwaving, grind the sesame seeds with a wooden pestle. Once they're ground down to your preferred size, add the miso, mayo and sugar and mix well.

Once the carrots and bell peppers are cooked through, mix in the sesame oil. Mix all of this with the dressing from Step 3, drizzle some soy sauce over it and serve!

It's even delicious with black sesame seeds.
