Ingredients

  • 1 canchickpeas, drained and rinsed
  • 1 cansweet corn, drained and rinsed
  • 2big tomatoes, diced
  • 3spring onions, chopped
  • 1 handfulpickled jalapeños, chopped
  • 1 handfulgreen olives, sliced
  • 1 handfulpickles, chopped
  • 1 tbspfresh parsley
  • 1 tbspfresh basil
  • Vinaigrette
  • 2 tbspgrainy mustard
  • 1 tbspred wine vinegar
  • 2-3 tbspextra virgin olive oil
  • 1small clove of garlic, minced
  • Pinchsalt and pepper

Steps

  1. 1

    Combine all veggies and pour over the vinaigrette.

    Let sit in the fridge for an hour at least before serving. Enjoy :)
