Koji, rice malt, is considered very healthy and boom in Japan. It helps meat tender and enrich dishes. However, it is expensive, so why don't you make by yourself?

Koji, rice malt, is considered very healthy and boom in Japan. It helps meat tender and enrich dishes. However, it is expensive, so why don't you make by yourself?

First of all, sterilize the jar by boiling. In order to prevent any other germs from generating: My easy way is put hot water into microwave-safe-food container and microwave until boiling with bubble. Then, soak jar and lid into this boiling water by using chopsticks or tongs. Be careful not to burn yourself.
*For convenience, sterilize spoons to be used later by boiling them together here. - 2
Transfer jars & lids (and spoon) and allow to dry. Use chopsticks/tongs and avoid touching with fingers to prevent bacteria from attaching.

Place ingredients in a jar and mix well with a clean spoon.

Cover the jar with clean kitchen paper and secure with a rubber band.

Every morning, remove kitchen paper and stir rice malt with clean spoon. Then, cover the jar with same kitchen paper, secure w/ rubber band. Continue this method for 7 to 10 days.

Note that on the 2nd day, rice malt soaks soy sauce, so add 20~50g depending on your rice malt's dryness.
(Later, it gets wet again, so no need to worry too much^^) - 7
After 7 to 10 days, depending on the season and room temperature, the koji is ready when it turns chunky and the koji is not stringy and soft.

Cover the jar with clean lid and place it in the fridge. Recommended to consume it within 3 weeks.
