Cooking Instructions

材料准备中 Ingredients preparing part :
把洗好的香蕉叶烫过
Blanched the cleaned banana leaves - 2
然后, 放在磨具中
Then put it in the molds - 3
班兰准备的部分 Pandan preparation part:
把380克的白糖倒进锅中
Add 380g of sugar into the pot - 4
加点清水,将糖溶解
Add little water to dissolve the sugar easily - 5
把一片片剪好的班兰叶加在搅拌机中,然后加些水搅拌成班兰汁。
Add the cut pieces of Pandan leaves and pour some water in blender to make Pandan juices - 6
把班兰汁用筛子过滤后再加糖水混合备用
After filter the Pandan juice through a sieve then mix with sugar water and stir well for later use - 7
等待焦糖完全溶解在水中,就可出锅备用
Wait the caramel sugar completely dissolved in water and prepare to use later - 8
制作部分Making process:
把380克的糯米粉放入盆中
Add 380g of glutinous rice flour into bowl - 9
分阶段倒入班兰汁搅直均匀
Pour the pandan juice stages and mix well - 10
用筛子过滤一遍
Filter it with a sieves - 11
倒入磨具中
Pour into molds - 12
盖上铝箔纸
Cover it with aluminium foil - 13
烹煮部分 Cooking Part:
倒入部分的水进锅中
Pour some water into pot - 14
再放入垫网
Put in cooking grill - 15
把装好的模具放入锅中
Set the prepared molds into the pot - 16
用大火煮至15分钟
Apply high heat and steam for 15mins - 17
调制中火煮至一个小时
Apply medium heat and steam it for 1hour - 18
一个小时以过去啦!完成啦

In the traditional village around Tabanan they have a unique tradition while celebrating Nyepi. The people in the village to prepare special foods such as rice cake (entil) on this holiday. The food is unique as it is known as entil, delicious taste can make people addicted. Because intended for consumption on Nyepi, it is only done once a year.Entil making process is like preparing rice cakes. Its main ingredient is rice or brown rice. The difference between ENTIL and rice LONTONG is generally how they are packed - Longtong are wrapped in banana leaves or coconut leaves, but Entil are wrapped in the leaves of telangi (telengidi or nyelep), which looks like elongated galangal leaves. The leaves can be found in the fields or the forest edge in the local village. It is said makes sense entil leaves are very tasty, although no salt or other seasonings. Telengidi leaves believed to make sense entil be more comfortable. Because the substance of green color in the leaves soak into the rice when cooked, the resulting entil have a greenish color.Entil it can last up to four days. People can make it in different sizes. However, the size is generally small, making it easy to eat. Making entil has been a tradition performed before Nyepi (Hindu forbidden to cook during Nyepi). The menu is also accompanied by natural dishes such as marinated chicken, shredded coconut and roasted peanuts. People can also add it to vegetable fry, but there must be shredded coconut (Urap or Serundeng). A family usually makes up to 2kg entil. This number is expected to feed a family during the days of exile (Nyepi).In addition to tempting the appetite, in fact entil have high philosophy. This philosophy is based on a double pile. This indicates that when celebrating Nyepi, or the traditional village should control their minds, and then focused on the presence of their Lord. First trial :) texture of the cake is a bit chewy because of the glutinous rice flour :) I used 21 cm diameter pan.The oil/butter used in this recipe is quite a lot. Because the glutinous rice flour somehow absorb a lot of moisture otherwise the cake will get harden the next day. I tried to cut down the oil/butter by half and it doesn’t turn out well 😂 purple_acied -

Pohulpohul Cake or Itak Pohulpohul is a traditional Batak snack, which comes from Tapanuli. Shaped like a fist knuckles, similar to Itak Gurgur because the shape is made with quite simple tools --- namely the fingers of your fist, which is why it is called "pohulpohul" (which means 'fist').There is little difference between Pohulpohul and Gurgur, among others : Pohulpohul only uses flour, unlike Gurgur which is mixed with grated coconut. Pohulpohul is steamed before serving, but Gurgur can be directly eaten after it is created. Pohulpohul cake contains nutrients, such as Carbohydrates, Protein, Vitamin B (B1, B2, B3, B6), Iron, Calcium, Fat, Omega 3 and Fiber.Pohulpohul is often brought as a souvenir for the family who comes to visit for a customary speech, for example to discuss marriage plans for men and women both parties. Of course, pohulpohul is only the 'companion' of the main souvenirs which is usually in the form of food 'weight' of the carp.Pohulpohul's shape follows the silhouette of a fist, and the fingers are used in forming the pohulpohul. Rice flour is the main ingredient so it becomes solid and the flours complement each other; it is a symbol of how the customary talks between the two sides (paranak and parboru) that takes place. In the process is characterized by dialogue and negotiation, there occasionally are words thrown that pierce or offend. However as in pohulpohul, where the flour are complementary and mutually self compacting --- presumably expected so the words that have sprung up in the customary speech, complementary and mutually condense with no other aim than to enhance the indigenous celebration being prepared. Trivia: Suman is a Filipino traditional rice cake that’s usually eaten during breakfast or afternoon snack paired with coconut jam, cocoa chocolate and coffee! This recipe was from my Lola’s (grandmother). She used to cook and sell this around our community when she was still alive. She literally did all the hard work from getting banana leaves, running them over fire to make the leaves soft, wrapping ( the most tedious process for me) cooking to selling.
